Stoke by Nayland Hotel, Golf and Spa are looking for an enthusiastic and driven individual to to join their team, managing the Gallery Grill & Orchard Lounge.

Reporting to the Head of Food and Beverage and working with a great team of staff, the ideal candidate will be a hands-on, energetic manager, who will lead our team by example. The successful candidate will be driven by providing a quality service and have new ideas on how to develop and drive the team and its service.

Stoke by Nayland Hotel has a beautiful setting within the Dedham Vale area, on the Essex and Suffolk Border. This vibrant restaurant transforms from a relaxing afternoon tea to a bustling evening venue for our hotel guests, and diners from the local area.

You will have experience of managing a busy dining operation to high standards, maintaining a professional and positive rapport with our guests. As well as these attributes you will also be organised, delegating and managing the team in a calm and supportive manner to ensure you achieve the best from them.

This is the perfect opportunity for a driven Restaurant Manager with new ideas and a willingness to improve and adapt both professionally and personally.

The successful candidate will be responsible for:

  • Overall day to day running of the restaurant
  • Managing the operational aspects of Gallery Grill & Orchard Lounge
  • Excellent communication with Kitchen Team
  • Organising and training staff at all levels
  • Development of Assistant Manager, Supervisors and Staff
  • Developing and maintaining standards
  • Daily operational communication to all relevant departments
  • Staff briefs of food service with kitchen team, station allocations and wine & drinks staff
  • Billing and invoicing controls to accounts department
  • Monthly equipment’s stock takes and control of purchasing and par stock levels
  • Short & long term planning in conjunction with the Restaurants & Lounge Manager and Food & Beverage Team

Desired skills

  • Management experience for minimum 70 cover dining
  • The highest attention to detail, leading your team to deliver exceptional standards
  • Good knowledge of contemporary food & wine
  • Have excellent organisational skills with clear, distinct briefing and delegation skills
  • The ability to deliver a 5* experience to all guests
  • A strong and supportive motivator and team leader

Additional Information

As part of the Food & Beverage Team you will be expected to work five days from seven, including weekends and early shifts, though mainly lunch and dinner service. When applying please also give details of present salary and salary expectations.

Free overnight stay on completion of probation. This will need to be taken within a certain timeframe, and subject to current bookings and availability.

For staff bookings up to 7 days in advance, hotel room rates for a member of staff (can include a guest in the room at no additional cost) are £55 B & B Monday – Thursday, £75 B & B Friday – Sunday

For staff bookings up to 3 months in advance, hotel room rates for a member of staff (can include a guest in the room at no additional cost) are £75 B&B Mon-Thu, £95 B&B Fri-Sun (only a maximum of 2 rooms per night can be booked at this rate on the same night in the hotel, and is on a first come first served basis).
